This citrus salad slaw is so tasty. I make a big batch of it at the start of the week and add it to salad leaves for a scrummy lunch. Would make the perfect side to any BBQ....
Blend 1/2 cup of cashew nuts (or leave out for nut free) with the juice of 1 lime, a square inch of ginger, 1tbsp of honey, 1tbsp of extra virgin olive oil, 1 cup of water, 1 heaped tbsp of garam masala, good pinch of salt and a good handful of mint leaves in a blender until well mixed.
Grate 4 large carrots in a large bowl and add a good handful of raisins. Pour in the dressing, mix well and serve with salad leaves and a good dollop of Houmous for a bit of extra protein, or serve as an accompaniment to a hot curry.
